Easy Guacamole is ready in no time at all
Saying that this is an Easy Guacamole kind of implies that Guacamole is difficult to make. It’s not, of course, but this method makes it even easier. It’s nearly as good too.
In the summertime, when we have lots of great veggies from the garden it’s different. I use fresh tomatoes, onions, and garlic. I basically make a pico de gallo and mix it with mashed avocado. But it’s February, and I don’t have anything fresh from the garden. I could use store-bought fresh produce, but it’s kind of disappointing right now. The perfect excuse, really to take a shortcut. I’m sure you agree, right?
Obviously, you don’t need to use this particular brand of salsa – whatever you like is going to work. The garlic is from our garden, and still in good shape. The jalapeno is also from our garden – tossed into a ziplock bag and into the freezer last September. They are just like fresh when you use them, but the fresh ones are usually available for cheap in the store all year. The avocado and lime came from the store because those things do not grow in upstate NY, no matter what time of year it is.
From start to finish, this takes 10 minutes tops. You can be binge-watching your favorite show, with a big bag of chips and Easy Guacamole in no time at all. Or use veggies, like I do – guacamole is my favorite thing to have with celery.
Be careful when taking the pit out of the avocado
Use a big, sharp knife. That may seem counterintuitive to you, but small dull knives are much more dangerous. Cut through the middle of the avocado, resting the blade on the pit inside. When you’ve gone all the way around, twist the two halves in opposite directions, pulling the sides apart at the same time. The pit will usually stay in one half. Hold that half in your non-dominant hand, if you feel like you’re good with a knife. Holding the knife in your dominant hand bring the blade down, right on the center of the pit, so that the blade is stuck in it. The motion is firm, but not violent. Then, just twist the knife slightly and the pit will pop right out. If not feeling confident, you can use a spoon to remove the pit. It’s a little more messy, but maybe safer. Easy Guacamole

- 1 large avocado
- 2 tablespoons salsa
- 1 clove garlic, minced or mashed
- 1/2 lime
- 1/2 jalapeno,cut in a small dice
- salt to taste
- Additional Hot Sauce [optional]
Instructions
- Open the avocado and remove the pit. [see the post for an explanation of how to do this]
- Scoop the flesh of the avocado into a flat, medium-sized bowl. Use a fork to mash it to the consistency that you like.
- Add all of the remaining ingredients, except the hot sauce and mix well.
- Taste and see if you think it could use more heat, and add your favorite hot sauce if you like.
- You can dig in right away, or let it chill for a while to allow the flavors to blend. If refrigerating, take a piece of plastic wrap and press it gently on the surface of the guacamole to prevent it from darkening.
